Anchovy, onion & green olive pinwheels

Ingredients

Prep time: 15mins.
Cooking time: 20mins.
Makes 12

1 onion, thinly sliced
1 tablespoon extra virgin olive oil
1 sheet frozen puff pastry, at room temperature
1⁄³ cup chopped green olives
8 anchovy fillets, chopped
2 tablespoons grated fresh parmesan
1 egg, beaten 
 

Method

1. Preheat oven to 200°C (180°C fan) and line a baking tray with baking paper.

2. In a frypan, heat oil then add onion and cook over moderate heat for about 5mins, stirring frequently, until soft. Spread evenly over pastry, leaving a 1cm border. Scatter with olives, anchovies and parmesan. Carefully roll up pastry and filling, brush with egg and cut into 2cm rounds.

3. Place rounds on the prepared tray and bake for 10-12mins or until puffed and golden.
