Angel hair pasta with herbs

Ingredients

Prep: 10 mins.
Cooking: 15 mins.
Serves 4-6

500g angel hair pasta
¹⁄ ³ cup (80ml) extra-virgin olive oil
2 large garlic cloves, chopped
¼-½ teaspoon chilli flakes
¾ cup chopped fresh herbs (plenty of parsley, basil and chives; thyme, rosemary and sage in moderation)
1 cup (100g) freshly ground pecorino or parmesan cheese 
 

Method

1. Bring a large pot of salted water to the boil and cook pasta until al dente. Drain, reserving a small jugful of the cooking water.

2. Meanwhile, in a frying pan that’s large enough to hold the pasta, combine oil, garlic and chilli, and cook over medium heat for 1-2 minutes, or until garlic is fragrant. Add herbs and cook for about 30 seconds, or until they start to sizzle. Remove from heat, add pasta and toss to coat, adding a little of the reserved cooking water to moisten, if required. Season and transfer to a heated bowl. Toss with cheese and serve immediately.
