Sang Choy Bao

Ingredients

Serves 4

2 garlic cloves, crushed
1 onion, diced
1 teaspoon sesame oil
400g minced lean pork
150g mushrooms, sliced
2 tablespoons soy sauce
¼ cup mirin or dry sherry
150g snow peas, thinly sliced
1 large handful bean sprouts
2 spring onions, sliced
Juice of half a lime
2 fresh pears, sliced
1 handful coriander, chopped
Iceberg lettuce leaves, to serve

Method

1. Combine garlic, onion and oil in a hot pan and sauté until golden. Add pork and mushrooms. Cook for 5 minutes, or until browned.

2. Add soy sauce, mirin, snow peas, bean sprouts, spring onions and lime juice, and stir-fry for 2 minutes. Stir in pears and coriander.

3. Spoon stir-fry mixture into lettuce cups, roll into parcels and serve.
