Watermelon, rocket & pine nut salad

Ingredients

Prep: 10mins.
Serves 4

1kg seedless watermelon, rind removed, cut into 1-2cm cubes
6 cups (100g) baby rocket
¼ cup (40g) pine nuts, lightly toasted
50g feta, crumbled
Coarsely ground black pepper and Maldon sea salt flakes

Dressing
1 tablespoon freshly squeezed lemon juice
1 tablespoon red wine vinegar
Good pinch of salt
2 tablespoons extra-virgin olive oil 
 

Method

1. To make dressing, combine lemon juice, vinegar and salt in a bowl and whisk until salt has dissolved. Add oil gradually, whisking constantly, until mixture has thickened. Check seasoning.

2. Add watermelon, rocket and pine nuts and toss. Scatter with feta and season with plenty of coarsely ground black pepper and a few pinches of sea salt flakes.
