What's in season? Lemons

Nothing says the start of spring like a twist, or two, of lemon.

The uses
In most cases lemons are too sour to eat on their own but are the perfect accompaniment for many meals. Lemons can be used in a large range of both sweet and savoury dishes as well as drinks. For example, chicken with lemon sauce, lemon tuna or lemon meringue pie and lemon torte.  Lemon zest and juice can also be great for couscous, pasta and salad dishes.  For drinks a slice of lemon can be placed in the beverage or on the rim of the glass.

Choosing in store
Look for bright, glossy lemons that seem dense or heavy for their size.

Pair with
Chicken, tuna, fish, rice, couscous, hummus, avocado

Tips
Squeeze some lemon onto very hot curries. It will reduce the heat making them easier to eat while adding a zesty flavor.

In the summer, a squeeze of lemon juice in iced water is a refreshing beverage.
